Domaine Christophe & Yoann Perrin, Fleur de Savagnin 2022 A beautifully poised example of Jura Savagnin, made in the ouillé style — topped up during ageing, rather than deliberately oxidative — giving a fresher, more precise expression of this characterful local grape. From marl soils in the Côte du Jura, this is 100% Savagnin, aged for around 18 months in oak. The nose shows white flowers, citrus peel, green apple and a gentle savoury nuttiness. The palate is textured and mineral, with a lovely saline freshness and a long, fine finish. Christophe Perrin founded the domaine in 1998, with his son Yoann now bringing a Burgundian sense of finesse and precision after experience at Ramonet and Tollot-Beaut. This is Jura with real elegance: distinctive, food-friendly and quietly complex. Food match: roast chicken, creamy mushroom dishes, fish tartare, Comté or a good cheese board.
