These beans undergo a labor-intensive natural process, where the fruit remains around the seed throughout drying, allowing its sugars to fully penetrate the bean. The result is a remarkably layered cup: dark cherry up front, smooth chocolate through the middle, and a hint of plum for the discerning palate.
