Free Range Chicken Thigh on the bone (quick frozen, un-aged, bone-in, skin on)
These are quick frozen, un-aged chicken thighs from free range chickens which are raised outside on fresh grass. This cut is on the bone, and is suitable for grilling, barbecuing, roasting or slow cooking. This chicken is frozen 2 days after it is killed and packed. This will help to reduce the development of histamine in the meat and is helpful for people who are trying to reduce the histamine content of their diet. To minimise histamine development It should be kept frozen, thawed quickly and cooked immediately after thawing. Quick cooking (e.g. Pressure cooking) is preferable to slow cooking such as roasting or cooking in a slow cooker. When cooked it should be eaten immediately, or refrozen as cooked meat immediately - it should not be kept as cooked chicken in the fridge as histamine will continue to develop in cooked meat unless frozen.
