Saint Véran 'Canopée' 2024
The site (or climat) of this vineyard is called 'Chaud Eau' (Warm Water), named after a spring that used to stay lukewarm at the same temperature year-round. The spring is not active anymore but the plot kept its name. I love this wine because it is an oaky Chardonnay that I actually like. The oaky notes are integrated, woven into the Chardonnay's typicity. It's like make up nicely done, highlighting natural beauty. Don't miss this wine from Sophie and David. As a matter of fact, don't miss any of them if you come across it 🧨. Region: Burgundy, Mâconnais Grape: 100% Chardonnay Alcohol: 12% Total SO2: 30 mg/L Service: 8/10°C Tech facts: 2024 was a rather fresh vintage. The soil consists of clay-limestone, with one meter of clay sitting atop a limestone shelf. The plot is located at an altitude of 250m; to balance this, the vines are north-facing, making it the coolest site on the estate. Manual harvest. Spontaneous fermentation. Aged for one year on the lees in 5 to 6 years old demi muids (600L). This is followed by 3 months of blending in stainless steel tanks. No SO2 added during pressing, natural malolactic fermentation. Bottled with a pinch of sulphur. No herbicides, no mineral fertilisation, no pesticides. 55 years old vineyards. Yield is 50hL/h. Bottled without fining and filtration.
