About the Cheese La Bouyguette is a stunning raw goat’s milk cheese from the sun-drenched South of France. These hand-moulded "little baguettes" are beautifully elegant, wrapped in a fine edible rind and adorned with a fragrant sprig of rosemary. The curd is delicately shaped in cloths, leaving behind soft folds in the surface, a nod to the skill and care of the cheesemaker. When young, La Bouyguette is creamy and subtle; with age, it becomes runnier in texture and richer in flavour, taking on an intensified herbal depth. Best enjoyed with a crisp sparkling or zesty white wine, it makes a graceful centrepiece for any cheeseboard. About the Cheesemaker La Bouyguette is produced by Segalafrom in southern France, a farmhouse fromagerie dedicated to traditional cheesemaking methods. Originally founded in 2005 by Mr Etevenon, a farmer passionate about animal welfare and raw milk cheese, the dairy was later entrusted to the Remond brothers of Fromagerie Le Pic in 2015. Their values remain unchanged: healthy, varied feed for the goats, daily milk collection, and a dedication to artisan processes. Segalafrom’s approach combines deep expertise with a warm, human touch, working closely with local producers and maintaining relationships founded on trust and care. This commitment is poured into every Bouyguette, making it a true connoisseur’s delight.
