It produces tropical and fruity esters with notes of peach and other stone fruits. Through expression of a β-glucosidase enzyme, Lallemand New England yeast can promote hop biotransformation and accentuate hop avor and aroma. It exhibits medium to high attenuation with medium flocculation, making it a perfect choice for East Coast style ales.
