This Saccharomyces strain ferments at 70–85° F to produce a delicate, tart, tropical flavor profile. It has low flocculation and high attenuation.
- The strain can ferment dextrins and tests positive for the STA1 gene.
- It is capable of producing very high attenuation and has alcohol tolerance up to 10% ABV.
