Mix, rest, shape, proof and fry, then get stuck into the fun part: choosing your toppings or fillings. Your choice: yeast or sourdough Use the yeast included in a separate sachet, or make sourdough donuts with your own sourdough starter. This mix can be used with either approach. For sourdough, follow a suitable sourdough donut method rather than swapping starter directly for yeast. Yeast-method quantities 500 g mix: 10 g instant dry yeast and 240–250 g water. 1 kg mix: 20 g instant dry yeast and 480–500 g water. 2 kg mix: 40 g instant dry yeast and 960–1,000 g water.
