Chokecherry Petty | 135mm Japanese Utility Knife | Reclaimed High Carbon Steel | Handmade in Canada
The petty is the small but indispensable workhorse of the kitchen — a versatile utility knife designed for precision and control. The Chokecherry Petty is crafted from reclaimed century-old high carbon sawmill steel, hardened to approximately 61HRC for exceptional edge retention. Its forged distal taper gradually reduces the blade's thickness toward the tip, creating a fine, responsive blade that excels at everything from trimming meat to preparing fruits, vegetables, and herbs. At 135mm, this petty strikes an excellent balance between the agility of a paring knife and the versatility of a small chef's knife. The 38mm blade height provides comfortable clearance for cutting board work, while its featherlight 69-gram weight makes it exceptionally nimble and comfortable to use. The traditional octagonal wa handle is crafted from a single piece of locally sourced Manitoba chokecherry, salvaged from a tree felled by an arborist. Rich in natural character, the wood features distinctly different figuring on either side, giving the handle a unique personality from every angle. It's a fitting complement to the reclaimed steel — two materials with histories of their own, brought together in a knife designed for generations of use. A handcrafted heirloom for the serious home cook or professional chef — built to be used, and built to last generations. For current production times, please visit our knife info page. This steel is known for its edge retention and durability. However, unlike stainless steel these blades will naturally oxidize over time and gain a beautiful patina.
