Kuheiji Betsu Atsurae Junmai Daiginjo
Kuheiji Betsu Atsurae is a Junmai Daiginjo crafted from Yamada Nishiki rice polished to 35%. Betsu Atsurae means “tailor-made,” reflecting a sake designed with the precision of a bespoke suit. The 2025 Brew Year marking follows Kuheiji’s vintage convention, which records the rice harvest year rather than the bottling or release year. Aromas of ripe pear and melon unfold with notes of apple peel and subtle white pepper. On the palate, elegant umami and refined acidity create a silky, layered structure, followed by delicate bitterness and a long, composed finish. Serve chilled at approximately 10 to 12°C in a wine glass. Pair with lobster, scallops, uni, caviar, bouillabaisse, grilled fish, or creamy dishes.
