The result is a tangy apple vinegar carrying the cool, resinous, pine-like aroma of mastic.Because it's unfiltered and unpasteurised, a living "mother" may form after opening and a little natural sediment can settle at the bottom — both are signs of a living vinegar, not spoilage.
