The processing of this coffee was done by Eduin's brother Fernando, whose experimental approaches to fermentation have yielded great results. La Cascada is a super special offering, even aside from being a family operation. This coffee was fermented in sealed anaerobic tanks, giving the roasted coffee an extra touch of subtle fruitiness, while maintaining the smooth, easy-drinking qualities of a traditional fully washed coffee.
