Eau Claire Single Malt

Eau Claire Single Malt Whisky is the truest expression of what we do. Made from Alberta barley and clear glacial water from the Sheep River, it rests a minimum of seven years in a combination of European oak casks with toasted heads and ex-bourbon barrels. The European oak brings structure and spice, the toasted heads coax out deeper caramelization from the wood sugars, and the ex-bourbon casks round things out with vanilla and soft sweetness. Aging happens high in the foothills, where wide seasonal temperature swings push the spirit further into the wood than most climates allow, what we call the Angels' Gift. The result is a single malt with real depth: patient, layered, and unmistakably Eau Claire.
