What sets it apart is the blend: an unusually high proportion of Chardonnay - around 40%, rare for a non-vintage Champagne - which gives it the lightness and finesse Taittinger is known for. Drawn from over thirty-five different crus and aged several years in the house's chalk cellars, it's a delicate, elegant style rather than a big or powerful one: peach and citrus, white flowers, a touch of brioche and honey, all carried on a fine, persistent mousse.
