Guest Spirit Hopworks Brewer's Whiskey
It started with a beer: Hopworks brewed their Organic HUB Lager using 100% two-row malted barley and intentionally left out the hops, fermenting it specifically so New Deal could turn it into whiskey. That beer wash came straight to our Central Eastside distillery, where we ran it through the brandy column and laid the resulting spirit down in new American oak barrels for five years. Because the mash bill is 100% malted barley, HUB Brewer's Whiskey is a true single malt—distilled from a finished, fully fermented beer rather than a traditional grain mash. On the nose, expect a bright, tart apple character with restrained oak. The palate opens with subtle malty sweetness, moves into a grainy, grass-forward middle, and finishes warm and oaky with a creamy apple note that lingers. Two independently owned Portland originals, one small-batch whiskey, ten years in the making.
