SALES FORMAT: 750 mL bottle STYLE: Mixed fermentation sour wheat beer LIMIT PER CUSTOMER: 6 bottles PERCENTAGE: 5% Batch 013 | Bottled June 16, 2022 This wheat beer was fermented by a symbiosis of Saccharomyces and Brettanomyces type yeasts as well as pediococcus type lactic acid bacteria and lactobacillus for 18 months in French oak barrels. Presenting a beautiful straw color, it offers aromas of green apple on a background of oak. It is subtly woody and round, which balances the very marked acidity of this beer.
