For this lot, the Hemavathi variety underwent an intensive 96-hour yeast fermentation. After careful cherry selection, a cultured yeast was introduced to guide and enhance the fermentation process, encouraging the development of complex fruit sugars and aromatic compounds. The extended fermentation allows the coffee to build remarkable depth and intensity while maintaining balance and clarity in the cup. Once fermentation was complete, the coffee was slowly dried under carefully controlled conditions to preserve its vibrant character and layered sweetness. The result is a strikingly expressive coffee that showcases both the potential of Indian specialty coffee and Ratnagiri Estate’s pioneering approach to processing. Juicy tropical mango takes centre stage, supported by the smooth almond-like richness of marzipan and lifted by bright notes of candied orange peel.
