Ex Nihilo Bourgogne Hautes-Cotes de Nuits Le Mont 2024

Burgundy // France Le Mont is born from Chardonnay grown on high altitude 350m plateau. Fresh and poised with good tension, and notes of bright grapefruit, melon and honeysuckle with a chalky mineral line. Manually harvested with a gentle 3–4 hour press and natural settling by gravity. Fermentation was spontaneous with native yeasts, followed by 9 months of ageing in oak barrels (60%) and stainless steel (40%). Only 2,200 bottles made.
