The coffee is shade grown beneath Inga trees before being carefully selected, washed and dried on raised beds. About the Producer Carlos Estrada began cultivating coffee at Finca Santa Irene in 2012, gradually developing 15 hectares of the family’s protected forest reserve. Passionate about specialty coffee, Carlos continually experiments with new varieties and processing methods while investing in equipment that gives him greater control over quality. Catuai is the farm’s main varietal, and Carlos combines careful farm management with a hands-on approach to processing.
