Presque Isle Farm Cider's Foxwhelp is a single variety cider made 100% from Foxwhelp apples - the famed Bittersharp English cider apple variety. This batch from PIF Cider is from the 2024 fruit harvest season. The Foxwhelp apples were fermented using Saison yeast, which gives this cider some nice supporting floral notes. Aged in Calvados barrels before bottling. Tasting Notes: Dry and bold tannins and acid, this cider has an excellent Foxwhelp profile. Citrus test and pith plus apple skin notes rush the palate at first sip. Mellowed by a light creaminess and floral notes reminiscent of orange blossom. Saison yeast esters compliment the floral qualities very nicely. About PIF Cider: Presque Isle Farm (pronounced: Preh-sk Aisle) is a fantastic cidermaker from Northern Michigan. Located on the shores of Lake Huron in the Northeast corner of Michigan's Lower Peninsula, PIF is a labor of love owned & operated by Dion & Molly Stepanski - partners in business and in life. The cidery was launched as an extension of their growing organic farm in Alpena, Michigan. PIF's focus is on English style cider - made with apples sourced from small farms across northern Michigan. They use a combination of cider-specific apple varieties, classic American apples, and wild foraged apples. Their cidermaking process focuses on minimal intervention and naturally fermented ciders. PIF's ciders are made in the traditional English and New England style and focus on cider-specific apples that can bring a complexity equal to wine.
