Its layered smoke character comes from three distinct sources: locally grown barley smoked with native NSW stringybark, stringybark-smoked oak casks, and smoked water used during production. The result is less Scottish peat bog, more campfire in the bush. On the nose, expect smoked bacon, roasted macadamia, golden syrup and charred lemon, with hints of pineapple and saltiness underneath. The palate brings honeyed sweetness and baked citrus before the smoke steadily builds, carrying cured meats, dry timber and delicate floral notes into a long, charred finish.
