Pickled baby cucumbers
This is one of my biggest delights! I can live on pickled cucumbers 🤷🏻♀️ PLEASE NOTE that some are small whole cucumbers and some are chopped - depending what I find fresh. I use cucumbers from the field (xorafiou) and make them with rice vinegar, water, maple syrup, fresh dill, coriander seeds, chilly flakes, salt and pepper. (No garlic and no sugar). keep them in the fridge and best eaten within 3-4 weeks.
