SMALLHOLDER FARMS CAJAMARCA, PERU Stewed Plum, Cola, Toasted Almond Kovachii is a certified organic coffee sourced from smallholder farmers in Cajamarca, a region in Northern Peru known for producing some of the country’s most expressive and refined cups. We’re proud to offer a coffee that reflects both the care of the people who grew it and the character of the land it came from. Coffee farming in Peru is deeply rooted in hands-on, small-scale production. For Kovachii, cherries are harvested, de-pulped, and dried on patios, raised drying beds, or tarps — a process carried out by individual producers on their own farms. The highest-quality selections from these smallholder lots are then carefully combined, milled, and prepared for export. In the cup, Kovachii is sweet and layered. We’re tasting dark stone fruit up front — think sweet plum — with the familiar, rounded sweetness of cola and a grounding nuttiness of toasted almonds. It’s a comforting, well-balanced coffee that we’re genuinely excited to have on the shelf.
