REGION: Nyabihu District PROCESS: Washed ROAST: Medium TASTING NOTES: Tangerine, Grapefruit, Cranberry CERTIFICATION: - This washed lot comes to us from Shyira Coffee Washing Station in the Nyabihu District in northern Rwanda. Shyira works with smallholder farmers who cultivate coffee at elevations ranging from 1,850 to 2,300 masl. These high altitudes, paired with cool temperatures and persistent mountain winds, create ideal conditions for slow cherry maturation and exceptionally long, controlled drying. After pulping, this coffee underwent controlled fermentation and thorough washing before being transferred to raised African beds, where it dried slowly over an extended 45-day period. This slow, gentle drying preserves aromatic compounds, enhances sweetness, and contributes to the remarkable cup clarity Shyira is known for.
