Our first savoury gluten-free vegan pastry. Four years of vegan croissant craft, twisted around our homemade fresh basil pesto. Eighty-four layers of vegan laminated dough wrap and fold around a pesto we make ourselves — toasted pine nuts, fresh basil, cold-pressed olive oil, lemon, a single clove of garlic, sea salt. No parmesan. None needed. The pesto sits inside the lamination and on top of it. As the dough lifts in the oven, the pesto bakes into the layers — herbal, savoury, layered the whole way through. Something between a croissant and focaccia. Born in our Battersea café. Now ready to ship. 100% gluten-free. 100% plant-based. Made by hand in Battersea, London.
