The tea leaves are plucked each morning during the last 2 weeks of March and must be plucked before the rising sun dries the misty dew. Only new leaves which are less than 20mm (approx. ¾”) long are selected. Then the leaves are skillfully rolled by hand, the same way it was hundreds of years ago. One of the many reasons this tea is so high in antioxidants. Once steeped, the tea is an extremely pale color with an almost sweet honey-like green tea flavor.
