This exceptional microlot comes from the renowned Las Lajas Micromill, operated by Oscar and Francisca Chacón—third-generation coffee producers in Costa Rica’s Central Valley. Known for their relentless innovation and dedication to quality, the Chacón family helped pioneer some of Costa Rica’s most distinctive processing techniques. This lot is produced using their unique Black Diamond Natural process, a carefully controlled slow-drying method designed to enhance clarity, sweetness, and complexity in the cup. The cherries are selected at peak ripeness and dried slowly under controlled conditions for several weeks, allowing the natural sugars within the fruit to crystallize and develop vibrant flavors. The result is a beautifully expressive coffee with bright fruit character and layered sweetness. In the cup, expect fresh cranberry and cascara notes, complemented by mellow nutmeg spice, lively acidity, and a gentle sugary sweetness that lingers long after the last sip.
