Featuring black cardamom and timur berries sourced directly from Nepal, this chile-free blend gets its bright warmth from ginger and mustard, striking a beautiful balance between deep and delicate flavors. Nepali curries are typically lighter than Indian curries, using water or broth instead of dairy and showcasing vegetables. Black cardamom, grown in the Himalayan foothills and coal-dried, brings smoky depth to the blend, while timur pepper, a citrusy relative of Sichuan pepper found only in Nepal, adds notes of grapefruit peel. We source these spices through a women-run company in Nepal supporting financial independence for rural women in their spice industry.
