GRILLED PORK TENDERLOIN MEDALLIONS SWEET n' SPICY GOCHUJANG SAUCE MOZZARELLA, PROVOLONE THIN CRUST CHILI CRISP You know how sometimes before bed you'll watch a quick 2 hours of Asian street food videos? I was doing that when I got inspired. This dish was served over noodles when I first saw it in a video of Chinese food in Korea. So this has a Korean gochujang pepper sauce beneath tender medallions of apple and ginger marinated pork tenderloin that I grilled over a wood fire. And a little Chinese spicy chili crisp on top to finish it off. It's a little sweet and it's packed with big umami flavors, and it's spicy I didn't think it's hot hot. Also the name of this pizza comes from my favorite breed of Chinese pig. Google Meishan pigs. They're so ugly that they're cute, and I would have like 12 of them if I could.
