2024 Clem
Inspired by the traditional Austrian Gemischter Satz style, Clem is a co-fermented field blend of six white varieties—Pinot Gris, Pinot Blanc, Gewürztraminer, Riesling, Grüner Veltliner, and Chardonnay Musqué—harvested from a dry-grown, closely planted vineyard at 7,700 vines per hectare. All grapes were picked on the same day, destemmed, crushed, and left on skins for up to seven days, imparting a distinctive amber hue and complex texture. Following pressing, wild fermentation continued naturally in tank, before maturation for seven months in a combination of a 1500-litre Foudre and seasoned French oak barriques, undergoing 100% malolactic fermentation. The wine is bottled unfined and unfiltered, preserving its full expression. Honeycomb in colour with some cloudiness in the glass. On the nose, Clem reveals a complex aromatic profile of apricot nectar, rose water, and musk, enhanced by subtle smoky nuances. The palate is creamy and textured, with a phenolic grip derived from extended skin contact, balanced by vibrant minerality that reflects the vineyard’s soils. Roasted nuts, beeswax, green pear and roasted sesame seeds balance the elegant finish which is saline, adding freshness and length. Rich yet precise, Clem is an ideal food wine, showcasing layered complexity and a true sense of place.
