Yoshimi Kato Hyo SG2 kiritsuke gyuto 210mm

Hand-forged in Echizen, Japan by Yoshimi Kato, this 210mm kiritsuke gyuto has an SG2 core with a tsuchime or hammered finish. It is part of Kato-san's Hyo series. The reverse tanto tip is useful for fine tip work. SG2 is a powder metallurgy (PM) steel with excellent edge retention and corrosion resistance, and it sharpens easily despite being a PM steel. The knife feels light in the hand for its size. The kiritsuke shape gives it a different look and feel from a standard gyuto, while still handling the same day-to-day cutting tasks.
