El Martillo
El Martillo is one of Jose Antonio Salaverria’s highest farms, situated at 1700masl in the rolling hills surrounding the Santa Ana Volcano. For this particular lot, the cherries are de-pulped, removing the surrounding fruit flesh from the beans. The beans are then soaked for 10 hours to allow a mild fermentation that helps remove any excess fruit, helping to make a cleaner, more transparent cup. The beans are then dried under shade on clay patios, the shade helps to maintain a more even temperature and a slower drying period. This gives more elegance and clarity, offering a clean, balanced and easy drinking experience, perfect for all brewing methods.
