Elderflower Blush Syrup Exceptionally Small Batch (only 50 bottles made this year), North Devon Elderflower season lasts just two weeks. Every June, we walk the hedgerows and field edges of Broomhill Farm and hand-harvest the flowers at their brief, fragrant peak. Our Blush Elderflower Syrup is even rarer. While our original syrup is made from the white elderflowers found throughout the farm, the blush version comes from a much smaller number of pink-flowering elder trees. That means we harvest far fewer blooms and produce only a small number of bottles each year. Back in the kitchen, we steep, strain and bottle in small batches. No concentrates. No shortcuts. The result is a syrup that tastes genuinely of elderflower: floral, delicate and unmistakably summer, with a beautiful blush hue that comes directly from the flowers themselves. In the glass Stir into sparkling water for an instant elderflower cordial. Add to gin or vodka with a squeeze of lemon for an effortless cocktail, or top up Prosecco for something celebratory. Works beautifully in mocktails too. Try it with cloudy apple juice and ice. In the kitchen Drizzle over a warm fruit pie, fold through whipped cream, or stir into yoghurt.
