The goal of this series is to produce exceptionally fruity, elegant coffees, and carefully fermented coffees mimicking wine making. The results speak for themselves. Decadent, rich, complex, and nuanced. Unlike a traditional natural process, Cooperativa El Porvernir slow dries their cherries, allowing for an extended fermentation time. That’s a challenge because longer fermentation times can lead to more off flavors if not properly managed. They properly managed this series. To do so, a rotating drum machine called a guardiola is used to finish drying the beans. This lets the producers decide exactly when fermentation should end, offering greater control of their end product. Technology like this dramatically increases the quality and consistency of boutique coffees like Arayza.
