Grape Varietal— Chardonnay This wine has fragrant notes of hazelnut praline, finger limes, lime blossom & nougat. The nose displays excellent depth & abundance of aroma with mineral complexity & a subtle hint of toasted oak. The lime zest is also evident on the palate, along with honeysuckle & hazelnut. Silky length and texture with a very long flavour profile & complex structure from wild yeast, “Surlée” in the barrel & concrete egg with a buttery & lingering finish. Toni Paterson Winemaking notes This limited Basket Press Chardonnay was crafted from a precious, hand-picked, single ton of grapes wrestled back from the relentless rains of La Niña. The fruit was carefully hand-picked, gently basket-pressed, and wild-fermented in 225L barriques for 8 months. A small portion—just 5%—was fermented in concrete eggs, adding an extra layer of complexity to the wine.
