Danilo Barbosa's family has been producing coffee since 1980 and over the decades have relentlessly sought to perfect their craft, incorporating the most advanced technologies available to unlock the full potential of this special terroir in coffee production. We bought this lot specifically as we wanted to bring on a coffee that showcases the best of the well know flavor profiles from this origin. Expect a medium-heavy creamy body with chocolate and hazelnut notes. Delicious on it's own or paired with milk for a satisfying low acidity cup. Ripe cherries are selected via mechanical separation then fermented in open tank for 48 hrs before transferring to the drying patio. The cherries are then sun-dried slowly for 15 days on patio turning regularly for even drying to 11% moisture. They're then rested for 25 days to homogenize and stabilize water activity, then stored in whole cherry pods until shipment time when they're milled and bagged just prior to shipment.
