Cask profile, 1st fill Oloroso sherry Oloroso is the dry, oxidatively aged style of sherry. Years of contact with air inside the cask build the nutty, leathery, savoury depth the style is known for, and a first fill cask hands all of it to the spirit. This is a full maturation, not a finish. Eleven years of first fill Oloroso on a delicate Speyside distillate produces a whisky that reads sweet up front, apricot jam and butterscotch, then dries into marzipan, hazelnut, and oak.
