Our butcher have portioned a whole Scotch Fillet Marble Score 4 into 300g steaks, four to a pack, vacuum sealed. Four packs, 4.8kg, $288. That works out to 16 steaks at only $18 each. The scotch fillet is one of the most loved steaks. Generous marbling, a rich fat cap, and the cap muscle running along the edge. At Marble Score 4, this is Angus at its best. Deeply flavoured and beautifully tender. Inspiration: Always bring the meat to room temperature before cooking and rub with salt and oil. Get your pan nice and hot and sear each side until you have a good crust. Drop the heat to low, add a knob of butter and a few slices of garlic and baste until cooked to your liking.
