The roots need room to burrow and anchor themselves as the shoots push upward, though it is possible to grow them hydroponically with the right setup and extra attention. Soak seeds in cold water for 8 to 12 hours before planting. Use a large bowl with plenty of water, since peas absorb a surprising amount as they soak. Seeds can be planted directly after soaking, but transferring them to a colander for another day or two, rinsing and draining 2 to 4 times a day, helps encourage even germination before the seedlings begin to peek out. Spread the soaked seeds thickly and evenly over prepared soil, then tamp gently to ensure good seed-to-soil contact. Mist thoroughly twice a day, and keep the tray covered with a blackout or humidity dome for 2 to 3 more days before exposing it to light. Once uncovered, water once a day so the soil stays damp without becoming soggy. Harvesting Pea Shoots Pea shoots are ready to harvest once they reach about 3 to 4 inches tall, usually with a set of true leaves and tendrils beginning to form. Use scissors or a sharp knife to cut the shoots just above the soil line, taking care not to disturb the root mass below. Harvest in the morning when moisture content is highest for the crispest texture, and use shoots soon after cutting for the best flavor. Using Pea Shoots Pea shoots have a fresh, sweet flavor reminiscent of snap peas, with a satisfying crisp crunch that holds up well in both raw and lightly cooked dishes. Toss them into salads, layer them onto sandwiches and wraps, or use them as a garnish for soups and grain bowls. They also hold their texture nicely in a quick stir-fry or light sauté, making them a versatile addition beyond just fresh eating.
