Product Details: Grape Variety: 100% Pinot Grigio. Production Area: Codroipo, in the Friuli Grave DOC area of Friuli Venezia Giulia, on the gravelly plains along the Tagliamento River. Soil Characteristics: Gravelly soils of alluvial origin, Guyot vine training system, 4,500 vines per hectare, yield of 110 quintals per hectare. Tasting Notes: Deep straw-yellow colour. Intense, elegant aromas with fruity notes of peach and citrus, accompanied by a subtle hint of nutmeg. Its dry, fresh character reveals refined fruit flavours and pronounced savoury minerality, creating a harmonious balance between softness, freshness and structure. Serving Temperature: 8°C (46°F), in well-chilled Carré wine glasses. Alcohol Content: 12.50% vol. Ageing: Three months of bottle ageing before release. Winemaking Notes: After destemming and crushing, the grapes undergo gentle pressing, yielding 50% free-run must. Fermentation takes place with selected yeasts for 15 days at a controlled temperature of 13°C. The wine then matures on its own lees for five to six months before racking and filtration, followed by three months of bottle ageing before release. Yield per Hectare: 110 quintals per hectare (11,000 kg/ha). Harvest Period: Last ten days of August, entirely hand-harvested. Food Pairings: Seafood, fish dishes and mixed salads. Ideal as an aperitif alongside sweet-and-sour or spiced dishes, such as swordfish marinated with pink peppercorns and orange.
