TIM ANDERSON'S SPICY CURRY TANTANMEN RAMEN KIT

about this ramen: tim anderson's curry tantanmen, from his new book japanese curry (and its delicious companions). a sesame and soy tare with s&b curry powder and our rayu goes into chicken chintan, with curry oil spooned over the top. on that goes tim's curry niku miso: pork mince fried with red miso, curry and a proper hit of sansho. when we tested it, it came out a bit laksa-y, which we didn't see coming and very much enjoyed. his recipe, made by us in taffs well. limited run. contents: chicken chintan (clear chicken soup) with tim's curry tantan tare + curry oil; curry niku miso (pork); menma; thin, wavy noodles. seasoned ajitama egg not included - add one here. greens + onions not supplied as they freeze so badly. tim's pick to finish it is coriander, spring onion and sweetcorn. beansprouts, mushrooms or bok choy all work too, and a spoon more rayu if you want it hotter. if the soup splits as it heats, whisk it hard or give it a blast with a stick blender.
