The sweetest and most straightforward of the three, and the easiest to hand someone who does not normally drink herbal tea. The colour change, which is the fun part Brew the Blue Pea on its own and it comes out a deep blue. Squeeze in lemon or lime and it turns violet, then pink, in about two seconds. It is the anthocyanins in the flower reacting to the acid, the same pigment that makes red cabbage change colour. Nothing is added and nothing is artificial. Layer it over ice with the Mango Passion underneath and you get a two tone glass that holds for a minute or so before it mixes. How to brew all three Boiling water, covered, 5 to 8 minutes.
