NV Cava Rosado, Pago de Tharsys - Cataluña

NV Cava Rosado from Pago de Tharsys is a lively sparkling rosé that captures the character of Spain’s renowned Cava region. Although labelled under the DO Cava appellation, it is crafted at the family-owned Pago de Tharsys estate in Requena, near Valencia, where 12–14 hectares of organic vineyards sit between 650 and 800 metres above sea level on limestone and sandy soils. Founded on a historic 1808 winery and led by Vicente García, known as the “father of Valencian Cava”, the estate specialises in premium sparkling wines. This non-vintage Garnacha-based rosé bursts with strawberry, raspberry and cherry notes, balanced by delicate pastry hints and creamy bubbles. Fresh, elegant and dry, it pairs brilliantly with tapas, seafood, grilled prawns, charcuterie and summer salads.
