Aroma Intense aroma, red and black fruit (strawberry, plum, blackberry, cassis) surrounded by delicate wood notes. Mouth In the mouth it’s intense, fresh, with fruit and tannins present but well polished, notes of black pepper and spice. Food Pairing Red meats, roast kid or lamb, meat dishes from traditional Portuguese cuisine. Soft cheeses (Serra da Estrela, Azeitão, Serpa). Vinification Crushing and destemming, fermentation in stainless steel vats at a temperature of 24 to 26ºC, with pumping over and delestage.
