Nectar-like sweet wine made using late-harvest Catarratto in the classic 'passito' style, where the grapes are left to dry on the vines until mid-October. Bunches are then destemmed and see an extremely long 40-day maceration on the skins, before being pressed into barrel for one year before bottling - the sugar content of these beautifully ripened grapes cannot be fully fermented out, creating a sensational vino dolce. It's an alchemic process, resulting in a luscious, amber wine crammed full of sun-kissed, marmalade-y stone fruits, flashes of almond, sage and salt, and finishing with long acidity that cuts it all through.
