Aurélie Parla and Julien Maublanc's certified biodynamic Jura white wine is 100% Savagnin from 1974-planted vines on grey marl soils at La Pierre, Buvilly. Whole-bunch pressed, indigenous yeast, aged 2 years in 400L oak barrels — ouillé (non-oxidative) for 18 months. Nose: White-fleshed fruit, citrus, and distinctive Savagnin spice — complex, vibrant, and luminous Palate: Taut and textured — citrus, pear, mushroom, and a beautifully salivating, chalky mineral tension Finish: Long, precise, and mineral — almond, subtle spice, and saline persistence throughout
