Working with organically farmed fruit and minimal intervention, his Champagnes are vivid, low-dosage expressions of the Aube.Bistrotage is Dufour's free-wheeling series named for the bistro tables it belongs on — each edition built around a single base harvest. B.19, from the sunny 2019 vintage, is Pinot Noir at its most joyful: generous fruit, fine bubbles and a fresh, saline snap that calls for another glass.
