Excelsa Espresso — Medium-Dark Roast Crafted for pressure brewing, our house Espresso is a medium-dark roast built from 100% Coffea Excelsa — a rare varietal that accounts for only a sliver of the world's coffee and behaves unlike anything in the usual Arabica-and-Robusta lineup. Naturally heavy-bodied and low in acidity, Excelsa is made for the machine: its dense, deep-rooted structure pulls a thick, lasting crema and gives espresso the weight and stability that lighter beans can't hold under pressure. We roast it medium-dark to sit right in the sweet spot — developed enough for richness and depth, restrained enough to keep Excelsa's distinctive fruit and spice alive in the shot. Expect dark cocoa, dried fig, molasses, and brown spice, layered over the syrupy body that defines the species. Pulled straight, it's bold and rounded with a rich, lingering finish. Steamed into milk, it truly comes into its own — that low-acid, full-bodied character cutting cleanly through a latte or flat white without ever thinning out. This is coffee's rarest branch, built for the bar.
