Join is in exploring the world of co-ferment. Our latest Globetrotter takes us to Brazil, where the Muniz family have been producing exceptional coffee at Fazenda das Almas since 1942. This rather special coffee showcases an exciting and relatively new approach to speciality coffee processing: co-fermentation. By fermenting coffee cherries with carefully selected fruits and yeasts, producers can creatively influence the flavour and character of their coffee. For this lot, fresh oranges and a specialist yeast are added during a 120-hour fermentation, creating a wonderfully distinctive coffee that celebrates both innovation and the skill of the people behind it.
