Colombia ACC - Attia Castillo

Process : Honey Cupping Notes : Green Apple, Dark Chocolate & Lime A distinctive honey-processed coffee with bright lime zest and sour apple sweetness, layered with dark chocolate and a refreshing tonic-like finish. Clean, vibrant and beautifully balanced. Lightly roasted, this coffee is perfect for pour over. We are also enjoying the medium roast as espresso and cafetiere. The ACC co-op is a non-profit organisation that was created in 2016 in Piendamo, Cauca. The purpose of the association has always been improving the coffee quality, going all the way from the crop until the commercialisation of the coffee, where improving these aspects will have a social impact on the region. Improving the wellbeing of the families, taking care of the environment, and trying to find peace in the territory. This honey is a community lot drawn from ACC members. Cherries are picked very ripe for higher sugar content and floated to remove defects, then rested through a 12-hour oxidation in the washing tank. The coffee is pulped and held in the reception tank for a 36-hour fermentation in the mucilage, before drying on a parabolic system until it reaches 10% moisture, over roughly five to six days resulting in a cup with a rounded sweetness and body.
